    • Sensations It has a pale pink colour and a dense, fine and persistent perlage. The nose is elegant, fruity, fresh and fragrant with a hint of yeast. The taste combines freshness, elegance and good persistence, making it suitable both as an aperitif and as an accompaniment to the whole meal. It also lends itself to particular combinations with elaborate dishes of the most classic Italian tradition. Recommended serving temperature: 6-8°C.
    • Vinification The grapes, harvested by hand in small crates, are picked slightly in advance of full ripeness in order to preserve their acidity and freshness. After a short maceration on the skins at a low temperature, in order to extract the characteristic colour, the grapes undergo soft pressing and racking to clarify the must. At this point our selected yeasts are added and the first fermentation takes place in stainless steel at a temperature of 17/19°C. The following spring the new wines are tasted and selected, then prepared for the second fermentation in the bottle. The second fermentation takes place slowly.

      "Zell" TrentoDoc Brut Rosé
    • As August draws to a close, it is time to harvest the grapes in the Zell vineyards to produce this interesting Metodo Classico Brut Rosé. Pinot Noir grapes are carefully selected and harvested by hand in small crates. After a brief maceration on the skins at a low temperature, to extract the characteristic colour, the grapes undergo soft pressing to obtain the free-run must used to make the base wine. Then, in the spring following the harvest, the resulting wines are selected and blended into the base cuvée. Zell Rosé remains on the lees for at least 24 months before being disgorged, revealing a sparkling wine characterised by a soft pink colour, with a dense, fine and persistent perlage. The nose is elegant, fruity, fresh and fragrant, with a slight hint of yeast. In the mouth, however, it combines freshness, elegance and good persistence. Perfect as an aperitif, it can easily accompany an entire meal. Good with fish, it has enough character and structure to stand up to delicate white meat dishes. Try it with a delicate rabbit ragout.

      Almost 70 years have passed since 1956, when eleven Trentino farmers decided to join forces to found the town's Cooperative Winery. The precise date is 17 October and the official documents state: "the purpose of the Society is the moral and economic improvement of its members by promoting, through appropriate initiatives, the increase of their wine production and by providing for the processing and joint sale of the product". Today, as in the past, unity is strength and aggregation in a cooperative structure allows even the smallest producers to face the market and make a profit.
