Abruzzo DOC Rosé, Trabocco Aureae Stellae is a Spumante Brut produced by Citra Vini. It is made from 100% Montepulciano d'Abruzzo grapes. The name recalls the trabocchi, ancient Abruzzo fishing structures that jut out into the sea. Ortona, the Abruzzi town where this Rosé is produced, is located on a stretch of coast overlooking the Adriatic Sea, characterised by a mild and breezy microclimate. The proximity to the sea and the surrounding hills guarantee an ideal climate for the cultivation of Montepulciano. This symbolic grape variety of Abruzzo is known for its versatility and great aromatic intensity. Used for the production of a sparkling rosé wine, it expresses a delicate freshness and red fruit aromas. After harvesting, the grapes are left in contact with the skins for 4-6 hours at a controlled temperature of 5°C to extract the varietal aromas and the characteristic bright pink colour. Subsequently, the wine undergoes a second fermentation in autoclave according to the Charmat method, with the addition of selected yeasts. Foaming, which lasts 15-20 days, gives the wine its fine and persistent perlage, making it fresh and lively on the palate. Brilliant pink in colour with a fine and persistent perlage, the nose offers a fragrant bouquet, with hints of rose, cherry and red fruit, enriched by a slight hint of spice that lends complexity. In the mouth it is harmonious and persistent, with a pleasant acidity that balances the softness of the finish. Perfect with fish dishes, especially shellfish, raw fish and fish soups, it is also ideal as an aperitif, paired with cured meats and pizzas.
