  • Sensations Soft pink colour with light copper reflections, creamy white foam, fine and persistent perlage. Complex aromas with fruity notes reminiscent of ripe cherry, currant and red apple. The taste is rich, well balanced with a very persistent aftertaste.
  • Vinification The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place, carried out by slowly pressing only the whole Chardonnay grapes to separate the different fractions of must which, inoculated with selected lees, ferments at controlled temperatures in stainless steel containers. The wine made from Pinot Noir is obtained using the "submerged cap" system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; only then is the must separated and fermentation continues in stainless steel at a controlled temperature. In this way we can obtain a soft and delicate colour from the skin, a distinctive feature of Cavit's Trento doc rosé. In the following spring, the wine is bottled and left on the lees for at least 15 months. At disgorgement a small dosage of liqueur d’expedition is made.

VINEYARD
  • Terrain Chardonnay is cultivated on soils mainly of fluvial-glacial origin, moderately deep, tending to be calcareous and rich in skeleton. The soils chosen for Pinot Noir are volcanic in nature, originating on the basalt of the Brentonico plateau, with a medium texture and well structured.

  • A head-turning cuvée, this Altemasi Rosé Trento DOC Metodo Classico from Cavit. Chardonnay and Pinot Noir (vinified in Rosé) constitute the soul of this successful and precious classic method sparkling wine. In the glass it is a pale pink colour with light copper highlights. The foam is compact, white and creamy, with a fine and persistent perlage. The olfactory profile, rich and articulated, has echoes of red fruits, with an accentuated presence of cherry, red apple and currant notes. The taste is full, harmonious, with a long lasting aftertaste. Cavit's Altemasi Rosé Trento DOC Metodo Classico lends itself to a multitude of combinations, although it is particularly suitable for accompanying aperitifs and soups.
