Today our journey takes us to one of the most characteristic corners of Spain. We are in Galicia, in the far north-west of the country, where hilly vineyards lap the Atlantic coast. A little corner of paradise on earth. Pájaro en Mano, literally ‘bird in the hand’, was born here, in the renowned D.O. Rías Baixas appellation. Produced by Nueve Uvas, this wine comes to life thanks to grapes from vines over 20 years old. It is, as its producers say, a tribute to the joy of life. Perfect to accompany moments of celebration, laughter and good company. The granite and alluvial soils, characterised by exceptional drainage capacity, favour the growth of high quality grapes. While the Atlantic climate, with mild summers and wet winters, creates an ideal environment for growing Albariño. This native grape variety is known for its ability to best express Galicia's unique terroir. Harvesting is manual, in 20 kg crates to prevent the grapes from spoiling. Once in the cellar, after destemming and soft pressing, the must ferments for 20 days in temperature-controlled stainless steel tanks, enhancing the varietal characteristics of the Albariño. In the glass, Pájaro en Mano has a bright, inviting, straw-yellow colour. The nose reveals a complex and refined bouquet, where notes of white fruit intertwine harmoniously with hints of citrus fruits, such as lime and green lemon. In the mouth it is ample and tasty, with a perfect balance between freshness and savouriness. Citrus hints dominate the flavour profile, providing a fresh and fruity finish that invites you to take another sip. Perfect with fish and seafood dishes, this Galician white goes particularly well with oysters, clams and grilled prawns.
