    • Gabacha is a 100% Sauvignon Blanc. But not the classic aromatic white. Starting with vineyards that are between 20 and 30 years old, and located at an elevation of about 750 meters above sea level. A place more unique than rare, with a very special microclimate. The grapes are harvested by machine, overnight, to ensure that the heat does not go to ruin such valuable raw material in any way. After harvesting, then, the grapes are macerated briefly to cold extract all the aromas and flavors of the berries.
