An ancient peasant story. A beautiful story that tastes of other times. It is that of Pagadebit, a traditional wine that best expresses the rural identity of Romagna. In the past, farming families cultivated Bombino Bianco, a particularly resistant and vigorous vine, in addition to Sangiovese. They did so because it represented security for the family's economy, since they used its wine to repay debts incurred during the long winter. Hence the curious name of the DOC, Pagadebit precisely. In the version proposed by Podere La Berta, 100% Bombino Bianco, harvested by hand and vinified according to tradition, with fermentation and maturation in steel for 5-6 months, followed by ageing in the bottle for at least 1 month. Pale straw yellow in colour, the nose reveals an intense, refined and persistent bouquet, with distinct hints of sweet almond, acacia flowers, elderflower and jasmine. In the mouth it is soft and harmonious. Savoury and with good acidity. Well balanced and persistent. Excellent as an aperitif, it is a wine that hardly makes one regret the purchase. Excellent with fish dishes but also with veg dishes. Try it to surprise friends, expert or not, with a truly unique wine.
