Pinot Noir is considered the noblest and most elegant of grape varieties. And at the same time it is the most difficult to interpret and the one that confronts the winemaker with complex choices. Dextrum is the Pinot Noir proposed by Azienda Agricola Lagertal. Trentino DOC, it is made from pure Pinot Noir, characterised by early ripening and great sensitivity to terroir. After harvesting, the grapes are brought to the winery and destemmed, followed by maceration and fermentation at a controlled temperature in steel tanks. Vinification is followed by 2-3 rackings in steel tanks and a rest period of about 15 months, during which the wine undergoes malolactic fermentation with a consequent softening of taste. This is followed by bottling and a further rest in the bottle for about 6 months before release. A pale ruby red colour tending towards garnet, the nose reveals an intense aroma of red berries of undergrowth, currants and cherries. In the mouth it is pleasantly dry, with sapidity and smoothness. It goes well with vegetable soups, pasta and beans and mixed meats.
