There are few grape varieties that represent the fascinating territory of Alto Adige better than Gewürztraminer. And this one from Elena Walch is certainly no exception. No artifice. No special oenological practices. The secret of this wine lies above all in the extraordinary convergence of a simply unrepeatable terroir. The grapes are harvested when they are perfectly ripe and brought to the cellar early, so that they can be processed with full respect for the original fruit. Before fermentation, the only special feature, the grapes are left to macerate for about 6 hours. Then we proceed with a careful but traditional vinification, in steel, at a controlled temperature. At the end of this phase, the wine matures for a few months on its lees before being bottled. This reveals a wine characterised by a beautiful bright yellow colour with golden highlights. The characteristics of the vine, which every good sommelier learns to recognise from the first months of study, are perfectly reflected in its bouquet. From notes of rose petals, to flowers, to spices. In the mouth, it is above all fine, with a fresh body and beautiful elegance. Excellent as an aperitif, it goes very well with spicy dishes, intense cheeses and preparations based on shellfish or grilled fish.
