    • Let us start by saying that the one proposed here is not just any Champagne. It is, in fact, the most famous and representative label of the Maison Deutz. We are talking about Champagne Brut Classic, defined as 'synonymous with reliability and security'. It is made from a skilful blend of the region's three typical grape varieties, Chardonnay, Pinot Noir and Meunier, used in this case almost equally. The grapes are selected from different estate crus located near Ay. After harvesting by hand and delivery to the cellar, the musts are fermented in steel, including malolactic fermentation. After bottling, the wine is then left to rest for approximately 36 months on the lees in the cellar. Only then, after disgorgement, is the Champagne ready to be put on the market. The result is a beautiful glass characterised by an intense golden colour, enhanced by an abundant and fine perlage. On the nose, the Champagne Brut Classic Deutz expresses soft and mineral scents with fruity and floral tones, and small hints of the world of pastry and bakery. In the mouth, it is characterised by a vibrant freshness that drives a pleasant and silky taste. This is the bottle to uncork to accompany an entire fish dinner. Excellent with salmon tartare, but also with delicate first and second courses. Perfect, for example, with linguine with lobster.

      As always fascinating, the history of the Maison Deutz began in 1838. We are in Ay, one of the most characteristic villages in the Champagne region. William Deutz and Pierre Geldermann, who came from Aquisgarana in Germany, settled here with the declared aim of producing great wines (and they should), starting with particularly suitable vineyards. Therefore, in the same year, they bought a first plot of land and started to produce grapes, vinifying them in their cellar. William Deutz, an expert in cultivation and winemaking, had had past experience at Bollinger. Pierre Geldermann, on the other hand, took care of the financial and commercial side of the Maison. Over the years, Maison Deutz expanded its activities, acquiring new cru, both around Ay and in the Côte des Blancs. Today, it produces around 600,000 bottles a year, either from its own vineyards or by purchasing grapes from experienced local growers who are able to guarantee the impeccable quality of their product. Maison Deutz sold part of its capital, about 60%, to Louis Roederer, which ensured major new investments and a thorough renovation of the cellar, which is now super modern, state-of-the-art technology. For the delicate stage of maturation, however, the wines are still placed in the beautiful cellar, which is entirely below ground level, up to 60 metres deep.
