Clongiàn is a Gewürztraminer, one of the most popular grape varieties among enthusiasts and experts for its pleasantly aromatic character. In this case, moreover, we are talking about vines cultivated high up in the mountains, which ripen slowly and gradually. The Clongiàn vineyard, in fact, is located in Faver, Altavalle, at about 630 metres above sea level. We are located in the eastern part of an amphitheatre, halfway up the mountain on the southern ridge of Monte Avvoltoio. This vineyard enjoys a unique microclimate and direct lighting from the first light of dawn until late in the evening. Harvesting, which is clearly manual, begins in the third decade of September. The grapes are immediately soft-pressed in an inert atmosphere. The must obtained is decanted and sent to fermentation in stainless steel tanks. At the end of this phase, the wine matures on its lees for a period of about 8 months before bottling. This is followed by a further 6 months resting in the bottle before release. Straw yellow in colour, this mountain white has sharp and concentrated aromas. It is reminiscent of citrus fruits, such as mandarin and lemon peel, tropical fruit, particularly lychee and guava, but also rose and tarragon. Good already today, this white has good ageing potential. With time it acquires more complexity, without losing fruit. A fresh and pleasant wine to uncork on more than one occasion, on the table it goes well with tasty first courses, preferably fish, or risottos and stuffed pasta.

This gives rise to the lines of 'structured high altitude' wines, between 400 and 500 metres, the 'high altitude bubbles', Trento Doc, between 500 and 600 metres and the 'elegant high altitude', between 600 and 700 metres.
