Soave Classico Brognoligo, an organic white wine by Cecilia Beretta, owned by the historic Pasqua family, is a beautiful celebration of the Soave Classico zone. In fact, the Brognoligo vineyard is located in the heart of the denomination, an area renowned for its rolling hills rich in volcanic and limestone soils. This unique combination gives the grapes minerality and complexity, making Soave wines always easily recognisable. 100% Garganega, this indigenous grape variety is distinguished by its ability to faithfully express the characteristics of the terroir. In the case of Brognoligo, it is accompanied by a vinification process that uses modern and careful techniques, making the final result even more intriguing. Harvesting is manual and takes place in mid-September. Prior to harvesting, the grapes are lightly dried on the vine for 2-3 weeks, a necessary measure to concentrate aromas and sugars. After a gentle pressing, the must ferments in temperature-controlled steel vats to preserve freshness and aromatics. 10% of the blend completes fermentation in French oak barrels, bringing softness and complexity. Finally, the wine matures for 3 months on fine lees, gaining structure and depth. To the eye, Brognoligo has a pale yellow colour with greenish reflections, a sign of freshness and vitality. The bouquet is an explosion of aromas: chamomile, tropical fruit and even a delicate toasted note. In the mouth, it surprises with its freshness, well-balanced savouriness and almond aftertaste, typical of Garganega. Good already today, Brognoligo has an ageing capacity of at least 5 years, during which it can develop further aromatic nuances. On the table, it is the ideal companion for delicate dishes such as risotto, steamed fish or fresh cheese. Its distinct natural flavour also makes it perfect with vegetable dishes, such as a white lasagna with asparagus or a barley salad with citrus fruits.
