Suavia's Soave Classico DOC Monte Carbonare is an authentic expression of the terroir from which it comes and the beautiful volcanic hills of Soave. The base is Garganega, first produced in 1986. The epitome of elegance, freshness and minerality, this Soave is made from grapes from a single vineyard, Monte Carbonare, which extends over 6 hectares located in the prized Additional Geographical Unit (U.G.A.) Carbonare. We are located at an altitude of 280 metres, with northeast and northwest exposures. Here a unique microclimate, combined with the volcanic soil, gives the wine a strong personality. The vines, grown using the traditional Veronese pergola, have an average age of about 60 years. The Garganega, an indigenous variety of Soave, is harvested by hand at the beginning of October to ensure the perfect balance between ripeness and freshness. Alcoholic fermentation takes place in steel at a controlled temperature, preserving the purity of the varietal aromas. The wine then matures for 12 months in contact with the fine lees in steel vats, acquiring its special creamy structure and typical complexity. Finally, before bottling, it undergoes only light membrane filtration, followed by a further 6 months of bottle ageing. Bright straw yellow in colour, the nose is recognisable for its smoky and sulphurous notes, accompanied by hints of flint, citrus and wild flowers. In the mouth, it is striking for its creaminess and great freshness. The finish is dry, long and persistent. It is a wine that stands out for its decisive character and ability to evolve in the bottle. An ideal companion for a wide range of dishes, it is perfect with fish dishes. It is also excellent with savoury white meats, risottos and medium-aged cheeses.

The Tessari sisters carry on the legacy left by their parents with passion, cultivating the 30 hectares of vineyards located in the heart of the Classic area of the Soave denomination. The company vineyards exclusively cultivate two indigenous grape varieties: Garganega and Trebbiano di Soave. The oldest vines, planted by grandparents, are over seventy years old and are a precious testimony to a winemaking tradition that deserves to be handed down.
