    "Carbonare" Soave Classico DOC 2021
  • Carbonare is - technically - an Additional Geographical Unit. In other words, a well-defined vineyard from which high quality grapes are sourced and used for the production of this Soave Classico. Or rather, as Inama's technicians say, 'their most modern interpretation of Soave Classico'. The vineyard, still cultivated with the classic Veronese Pergola system, is located in the Carbonare area and enjoys an eastern exposure. The soil is typical for the area, namely volcanic and capable of imparting a subtle minerality to the wines produced there. 100% Garganega, the vines are between 45 and 60 years old and are located at an altitude of approximately 250 metres above sea level. Once in the cellar, the grapes are gently pressed and remain in skin maceration for 3 to 12 hours. Alcoholic fermentation follows, in steel, after which batonnage is carried out monthly for a year. It is bottled in November and then left to age for a few months before being presented on the market. A vertical wine with an important acidic shoulder, it has a distinct floral character. This is followed by citrus sensations and a sharp, savoury finish. An intense white with character, this Soave calls for a delicate pairing. Excellent with a rich plateau of raw seafood or, to stay in the territory, with a tasty baccalà mantecato.

    The history of the Inama winery is deeply linked to that of its founder, Giuseppe Inama, who for over forty years invested his energies in the vineyards on Monte Foscarino. What he considered, probably rightly, to be one of the most important territories in the Soave area. The winery is located in San Bonifacio, in the province of Verona. The first bottles produced by Inama date back only to 1991. The first wine was a Sauvignon, a new variety for the area, which was called 'Vulcaia', to emphasise the uniqueness of a soil of ancient volcanic origin that deserved to be enhanced with shrewd vinification and a focus on quality rather than quantity. Today, the winery is run by Stefano, Giuseppe's son, who is proving to be one of the area's most eclectic winemakers, capable of daring with innovative choices that often break with tradition. With him are Matteo, Alessio and Luca, who represent the third generation of the family. 30 hectares of land, mainly cultivated with white varieties, and conducted with passion and competence.
