The hills of Canavese, in Piedmont, offer an evocative setting, divided as they are between vineyards, woods and medieval villages. It is in this unique setting that Erbaluce di Caluso DOCG is born, a white wine with a strong and unmistakable character. Here the climate is characterised by cold winters and hot summers, with good temperature ranges. These conditions allow the Erbaluce grapes to reach perfect ripeness. The vineyards are also rooted in sandy and pebbly soils of ancient morainic origin, with good exposures that allow the grapes to absorb the sun's heat. A versatile wine, the Erbaluce di Caluso DOCG proposed here by the Cantina Produttori is called Fiordighiaccio and is one of the denomination's most representative labels. The curious name refers to the carbonic snow used to cool the grapes during the first stages of vinification. Fiordighiaccio, in fact, comes from a selection of the best Erbaluce di Caluso grapes, subjected to a process of cryomaceration before pressing. This is another reason why it immediately reveals itself to be a very pleasant and mineral white wine. On the nose, in particular, it amazes for the richness of its bouquet, with notes of fresh fruit and flowers. In the mouth, it is soft, fresh and well balanced. Due to its intensity of aromas and pleasantness, this pure Erbaluce is perfect both as an aperitif and with fish dishes.
Originally conceived as the didactic cellar of the Carlo Ubertini Professional Institute, Cantina Erbaluce became the current Cooperativa Produttori Erbaluce di Caluso in 1975. At that time there were 13 winegrowing members. Today there are 150. Approximately 80% of Caluso's wine growers and it is still occasionally used as an educational workshop by the students of the Istituto Agrario. The winery is dedicated to the transformation of Erbaluce di Caluso grapes in its three varieties still, passito and spumante. Of the 70 hectares of vineyards tended by the members, 38 are reserved for this vine and trained on the Canavese pergola system. Despite its longevity, the Cooperative's objectives remain unchanged: promote the territory, maintain it and foster Canavese viticulture with the spirit of aggregation.
