Originally conceived as the didactic cellar of the Carlo Ubertini Professional Institute, Cantina Erbaluce became the current Cooperativa Produttori Erbaluce di Caluso in 1975. At that time there were 13 winegrowing members. Today there are 150. Approximately 80% of Caluso's wine growers and it is still occasionally used as an educational workshop by the students of the Istituto Agrario. The winery is dedicated to the transformation of Erbaluce di Caluso grapes in its three varieties still, passito and spumante. Of the 70 hectares of vineyards tended by the members, 38 are reserved for this vine and trained on the Canavese pergola system. Despite its longevity, the Cooperative's objectives remain unchanged: promote the territory, maintain it and foster Canavese viticulture with the spirit of aggregation.
