What a wonderful grape is Chardonnay? Native to Burgundy, where the climate is certainly not too hot, this grape variety is able to adapt to practically any climatic conditions. Depending on the case, it produces wines that are more or less fresh and endowed with natural acidity. What they all have in common, however, is a distinct elegance and finesse of aromas. This Santoro Chardonnay Puglia IGP, a 100% Salento wine, is no exception. It is produced by Terre di Sava, which works its vineyards in the province of Taranto. Harvested when perfectly ripe, the grapes are quickly brought to the cellar to be processed within a few hours. We start with the destemming and soft pressing of the grapes, followed by cold static decantation to allow a natural cleaning of the must. Immediately afterwards, it is time to start the alcoholic fermentation phase, which always takes place in temperature-controlled stainless steel tanks. At the end, the wine remains in steel tanks for the refinement phase before bottling. Straw yellow in colour, this elegant Apulian white has a fine and delicate bouquet, with notes of citrus and green apple. In the mouth, however, it surprises for its decisive softness, well supported by a pleasant savouriness and good acidity.
