The name DeAetna that characterises this line of Sicilian wines from Cantina TerraCostantino is inspired by the title of an ancient Latin pamphlet. Etna Rosato DOC, this wine is the result of the processing of two native Etnean grapes, Nerello Mascalese and Nerello Cappuccio. Ancient vines that in recent years have attracted the interest of many enthusiasts, in Italy and worldwide. TerraCostantino cultivates them in the company's vineyards in Contrada Blandano, on the southern slope of the volcano, about 450-550 metres above sea level. Here the old vineyards with plants over 40 years old find an ideal microclimate, with roots sunk into soils rich in minerals and a beneficial thermal excursion that favours the slow ripening of the grapes. Harvested by hand, the grapes are quickly delivered to the winery for processing within a few hours. The must is obtained by direct pressing followed by a cold clarification phase and fermentation at a controlled temperature. For subsequent ageing, the wine is left in steel tanks for a few months in contact with its own yeasts in order to enhance the characteristics of the terroir. This is an extremely versatile wine, which goes equally well with meat and fish dishes. Served chilled, it can also be a pleasant aperitif while waiting for dinner to be ready.

Both the cellar and the barrel cellar do not require artificial cooling systems. The soil they are in contact with maintains a constant temperature of 15° and ensures natural ventilation.
