Maison Pol Couronne presents here what can be considered its basic cuvée. Champagne Brut, it is made from a blend of the three grapes typical of the region. 35% Pinot Meunier, 34% Chardonnay and 31% Pinot Noir. A 'Brut cuvée that reflects the terroir of Champagne', as Jean Baptiste Prevost, winemaker of the house, explains. The best grapes are carefully selected, resulting in a refined and balanced Champagne. The cuvée is made up of 65% wine from the latest vintage, plus 35% reserve wines. Malolactic fermentation is carried out at 90%, to maintain the freshness of the finished wine, without compromising its complexity. Maturation on the lees lasts for approximately 42 months and, after disgorgement, the wine is dosed with 8 grams of sugar per litre. In the glass it has a beautiful pale yellow colour with fine bubbles. The nose reveals a particularly expressive wine, with aromas of almonds, citrus fruits, hay and flowers. In the mouth, however, the Champagne reveals itself to be lively and fresh, with notes of grapefruit. Well balanced, this Brut has a pleasant persistence. Perfect as an aperitif, this Brut proves particularly versatile in terms of pairing. Try it, for instance, with prawn ravioli, risotto with green asparagus and especially with mushrooms.
