M de Minuty Côtes de Provence AOP is a Provençal rosé of great charm. It is offered here by Château Minuty, a winery renowned for its expertise in producing wines characterised by elegance and freshness. The grapes, which come from vineyards located in different areas of the Côtes de Provence, are typical of the region: Grenache, Cinsault, Syrah and Tibouren. Harvesting is done by hand at the optimal time of ripeness to obtain grapes of the highest quality. Vinification involves cold pressing and low-temperature fermentation in stainless steel. Malolactic fermentation is not carried out to preserve the wine's freshness and natural acidity. The result is a rosé characterised by a beautiful soft pink colour with luminous reflections reminiscent of rose petals. The nose opens with a crisp and vibrant bouquet, with notes of wild berries, citrus fruits and white flowers. In the mouth, it is delicate and intense, with a pleasant freshness that accompanies a persistent finish. The sip is harmonious and balanced, with a minerality that makes it perfect with fish and shellfish dishes. M de Minuty is a wine that should be drunk young, ideally within 3 years of harvesting, to best appreciate its freshness and fruity aromas. It all began with the replanting and restoration of the château, dating back to the time of Napoleon III, by Gabriel Farnet. His vision was to create a winery that would enhance the peculiarities of the soil and the exceptional terroir of the area, characterised by limestone soils and a temperate, maritime climate. Surrounded by vineyards and olive groves, set in a breathtaking landscape, the château's property covers some 70 hectares between Gassin and Ramatuelle. The vineyards are planted with Grenache, Syrah and Mourvèdre, typical vines of the Rhone valley and Provence. Château Minuty has been run for three generations by the Farnet-Matton family, which over the years has managed to combine tradition and innovation, becoming one of the best wineries in Provence.
