It is called Vegoia and is one of the good products offered by Fattoria Mantellassi. Produced from pure Ansonica grapes cultivated on the hills of the Tuscan Maremma, it is a fresh and mineral wine that expresses the characteristics of this indigenous variety at its best. Ansonica is an indigenous grape variety of the Tuscan Maremma, known since Roman times. It prefers warm climates and dry soils, just like those typical of southern Tuscany. In this case, the grapes come from hillside vineyards, where the soil is tufaceous-calcareous, rich in minerals. After harvesting, which is done manually, the grapes are taken to the cellar to be processed. It starts with destemming, followed by two separate vinifications. The first consists of an alcoholic fermentation of more than 30-40 days, in steel, to allow freshness, elegance and minerality to be maintained. Once alcoholic fermentation is complete, the wine is kept in contact with its fine lees. At this stage, continuous batonage enhances the organoleptic characteristics of the varietal. At the same time, a portion of overripe grapes are vinified separately in small oak barrels, where the oxygen helps emphasise the pure DNA of the Ansonica. Finally, the wine matures for two months in vats before being bottled. In the glass it has a beautiful intense straw yellow colour. The nose has aromas of broom, nectarine, white plum and Mediterranean scrub. In the mouth it is savoury and fresh, with a good persistence. It goes well with fish, shellfish, vegetables and light first courses. Also perfect as an aperitif.
