It is called "Le Différent," the different, and it is an interesting red from the Bordeaux region, and to be precise from the Saint-Émilion area, known as the birthplace of Merlot. It is offered by Château de Ferrand, one of the appellation's historic wineries, active since the early 18th century. 85% Merlot, 14% Cabernet franc and 1% Cabernet Sauvignon, this red comes from estate vineyards located in the commune of Saint-Hippolyte. We are at about 100 meters above sea level, with good southern exposure. The soils here are limestone, clay and sandy, rich in fossils and carbonate. Ideal conditions for the production of quality wines. Harvested by hand, with grape selection in the vineyard, once in the winery the grapes are destemmed and subjected to further selection of the bunches. Vinification then takes place in thermoregulated steel vats, carefully separating each parcel. After processing is complete, the wine matures for more than a year in French oak barriques. Only then does it meet the bottle and, after a further period of aging in glass, it is finally ready to be put on the market. Garnet red, on the nose notes of red and dark berry fruit, floral and herbaceous, followed by spicy notes of coffee, tobacco and vanilla. In the mouth, it is elegant and structured, with a perfect correspondence between nose and palate. Great minerality, this is a red to uncork when the menu is all about meat. Also perfect with cured meats and medium-aged cheeses.
The history of the Château de Ferrand winery began in the 18th century. The owner and founder, Elie De Bétoulaud, a lawyer, poet and patron, was a great friend of King Louis XIV. And just to recreate the atmosphere of the palace of Versailles, he decided to have this wonderful Chateau built, divided among various rooms, tunnels and with acres of land. The wonderful property remained in the same family until 1978, when it was finally purchased by Baron Bich. After his death, today Ferrand is run by his daughter Pauline Bich Chandon-Moët and her husband Philippe Chandon-Moët. In 2010, the Château de Ferrand underwent major works. The vineyard was replanted, after a careful study of the soils to identify grape varieties best suited to the particular terroir. In all, the property covers 42 hectares, 32 of which are planted with vines classified as Saint-Émilion Grand Cru Classé. In the countryside, Merlot for 70 percent, Cabernet Franc for 29 percent and Cabernet Sauvignon for the remaining portion. Production is focused on respecting nature and developing sustainable production.
