  • When the expert hands of the Dom Pérignon vintners harvested the grapes that would become this wine, many of the people who are now old enough to drink it were still in kindergarten. This is because Dom Pérignon P2, or rather, Plénitude 2, represents the second life of the world's most famous Champagne. A second life that begins after almost 20 years of resting in the cellar. Indeed, since the creation of each Millesimato, a certain number of bottles of Dom Pérignon are kept aside for a longer maturation period. Thanks to this additional waiting time, the activity inside the bottles intensifies and the yeasts transmit new energy to the wine. 2006 was a vintage marked by contrasting weather, characterised by a hot and dry July, followed by an unusually cool and wet August. September brought back almost summer-like conditions, which dried out the botrytis spots and allowed the grapes to reach above-average ripeness. Harvest began on 11 September and continued for almost three weeks. On the nose, there is a remarkable, enveloping softness, with floral and mineral nuances that open onto notes of vineyard peach, cedar, calisson and mocha. On the palate, the wine is elegant and full, with a complexity that gradually grows, enriched by a subtle saltiness and ending with a refined and ripe bitterness, enriched by notes of dried fruit, cocoa and roasted hazelnuts.

    Dom Pérignon is a French champagne brand, produced by Moët & Chandon in Épernay, a commune in the Champagne-Ardenne region. The name of this drink derives, although opinions differ, from the oenological inventiveness of the Benedictine monk Pierre Pérignon. Dom Pérignon was, according to the English scholar Laurence Venn, the first champagne defined as 'prestige'. The first vintage dates back to 1921, but the product was not marketed and sold to the public until 1936, after the Great Depression. Dom Pérignon is only produced during the best years of the harvest, and the grapes used to produce it come from the harvest of the same year, unlike other types of champagne, which are produced from a cuvée of wines from different vintages. Approximately 5 million bottles are produced each harvest. The wine is made from Chardonnay and Pinot Noir and rests in the cellar for at least eight years before being put on sale.
