Cava DO, from the Penedès region, this Spanish classic method comes from processing native grapes: Xarel-lo, Macedeo and Parellada. A fresh and naturally pleasant sparkling wine, characterized by a beautiful straw-yellow color with greenish reflections and a fine, persistent perlage, with abundant bubbles rising unceasingly from the bottom of the glass to the surface. Typical aromas of white fruit, and in particular green apple, peach, and apricot, stand out on the nose, to which sharp hints of white flowers, citrus notes, and bread crust are added. The mouth, however, reveals a pleasantly fresh and lively wine, well supported by excellent acidity, with fine bubbles that tickle the palate for a long time. Agile and pleasant, it has a nice finish that prolongs the pleasure of drinking for several seconds. Excellent as an aperitif, this bubbly certainly knows how to accompany fish-based first and second courses as well. Try it, for example, with simple cuttlefish stew. Music for the palate!
