Fresh from the sommelier course, you might run the risk of thinking that this wonderful white wine originated in Austria. That's because the Grüner Veltliner grape variety, with its unmistakable aroma, is especially common on the other side of the border. In this case, however, the Grüner Veltliner white wine is offered by Cantina Valle Isarco and the grapes used to produce it come from vineyards located in the best production areas of the middle valley. We are over 550 metres above sea level. Here the grapes enjoy a beneficial temperature range between day and night, which favours full ripening and the appearance of the most typical characteristics of the vine. In the winery, the grapes are gently pressed and, after a short period of contact with the skins, fermentation is started at a controlled temperature. This takes place half in large acacia wood barrels and half in stainless steel tanks. At the end of fermentation, the wine is left for a further 7 months of slow maturation on its noble lees. In the glass it has a beautiful, lively colour, between greenish and light yellow. The nose reveals a delicate and harmonious bouquet. Fruity, with light floral and herbaceous notes. In the mouth it is pleasantly spicy, fresh and slightly aromatic. The finish is long, leaving the mouth good and immediately ready for another sip. Good as an aperitif, its freshness makes it an ideal contrast to the typical sweetness of fresh cheeses.
Despite the fact that the Valle Isarco valley has an ancient winemaking tradition, the beautiful cooperative winery was only founded in 1961 by 24 families. Cantina Valle Isarco is the youngest wine cooperative in South Tyrol and today, after more than 60 years, can count on the work of 135 members who cultivate a total of 150 hectares of vineyards in 11 municipalities from Bolzano to the south of Bressanone. The Valle Isarco offers one of the most beautiful natural landscapes in South Tyrol, characterised by majestic mountains, ancient farms, castles, monasteries and villages, magnificent chestnut groves and above all terraced vineyards with their neat stone walls. Here, the vine-dressers carry out 'heroic' work, accustomed as they are to caring for predominantly steep terrain, with plants growing up to 950 metres high. Vineyards that are often tiny in size, but just as often characterised by unique soil and climate conditions. The special microclimate of this area, characterised by hot summer days and cold nights during the harvest period, ensures the production of fresh, fruity and mineral-rich wines. Overall, the Cantina Valle Isarco produces around 950,000 bottles a year, divided between 14 varieties, of which 10 are white and 4 red. The total number of labels is 28, including some very interesting special editions. The winery's "white" vocation is best expressed through the good local grape varieties, such as Kerner, Sylvaner, Grüner Veltliner, Gewürztraminer and, of course, Müller Thurgau.
