The Moscato Rosa grape variety is the protagonist here. Pasithea Rosa, Alto Adige DOC, comes from a pure processing of this interesting aromatic grape variety. The Girlan winegrowers cultivate it on the hills of the Oltradige, at an altitude of around 450 - 500 metres above sea level. Here the vineyards enjoy excellent exposure and are well ventilated. The grapes ripen healthily and are rich in aroma and flavour. This is also due to the soils in which they are rooted, rich in minerals and of ancient formation dating back to the glacial era. The grapes are harvested by hand and left to dry on the vine. Harvesting takes place towards the end of the year and the delicate bunches are delivered to the winery in small containers. At the beginning of the following year, maceration on the skins begins and continues for about two weeks. This is followed by pressing and the final fermentation, which is very slow due to the high sugar content. Finally, the wine is matured in small oak barrels, barriques, where Pasithea Rosa waits for no less than eight months. Elegant and complex, this passito has aromas that bring to mind the scent of roses, ripe wild strawberries and cranberries, as well as a delicate spicy character reminiscent of cinnamon. This passito goes well with fruit desserts and simple cakes.

The oenologist responsible for the creation of the wines is Gerhard Kofler, who personally maintains contact with the winegrowers and provides advice during the most delicate phases of the season.
