This Vespa Bianco is one of the symbols of the Bastianich winery. This is a blend of Chardonnay and Sauvignon grapes, with the addition of 10% Picolit. All the grapes used in this case come from the Buttrio and Premariacco areas, in the province of Udine. The grapes are selected on sorting benches before being gently pressed. The first-press must is then placed directly into spontaneous decantation for 48 hours and combined with a portion of the press must. Alcoholic fermentation then takes place separately for each variety. For 50% of the fermentation takes place in steel, and for the remaining 50% in 5 and 40 hectolitre oak casks. At the end of fermentation, keeping the wine in contact with most of the yeasts, a long period of batonnage begins, alternating with racking until May. Only then is the wine finally assembled for bottling. A year of bottle ageing completes the process. The result is a wine characterised by a beautiful straw yellow colour with golden hues. On the nose, mineral and citrus notes alternate with sensations of flowers, honey and ripe pear. In the mouth, however, it is above all elegant. Rich in aromas, it is perfectly balanced between freshness and body. To appreciate it at its best, the right combination is with white meats, such as roast chicken or turkey, but also veal or pork. It is also excellent with fish, of course. As long as it is very tasty.
The Bastianich family, that of the legendary Joe, has a history deeply linked to wine and to Friuli in particular. In fact, since 1997 the Bastianich Estate has been able to count on no less than 40 hectares of vineyards, located in two distinct areas of the DOC Colli Orientali del Friuli. Part of them are on the Buttrio and Premariacco hills, in the hottest and southernmost area of the denomination. Here ripening is influenced by the warmth coming from the sea and the grapes are perfect for the production of the most full-bodied and structured wines. The other part of the estate is located in the hills of Cividale del Friuli and enjoys a completely different climate. Often affected by the Bora, the cold wind from the north, it produces wines with greater aromatic intensity. In the Bastianich wine range there are extremely territorial whites and reds, with some peaks of absolute excellence.
