Timorasso is an indigenous grape variety of the Piedmont area, in particular of the Colli Tortonesi, in the south-eastern part of Piedmont. In the past, this vine had almost completely disappeared, supplanted by other varieties considered more productive and easier to cultivate. However, as often happens in the world of wine, starting in the 1980s and even more so in the following decade, some visionary producers rediscovered the potential of Timorasso, giving rise to a true renaissance of this grape variety. In recent years, then, this vine has gained increasing attention from wine critics, becoming one of the most appreciated and internationally recognised Piedmontese white wines. A fine example is this Colli Tortonesi DOC Timorasso Derthona, proposed here by Vite Colte. 'Derthona' is the ancient Roman name for the city of Tortona, located precisely in the Colli Tortonesi. After a soft pressing and a short cold maceration, the must is left to ferment at a controlled temperature to enhance the varietal aromas. This is followed by a long period of ageing on yeasts and fine lees to increase complexity and longevity. This maturation phase continues for at least 12 months. Intense straw yellow, the nose is complex. Notes of flowers, such as acacia and hawthorn, peach and honey are accompanied by hints of minerals and flint. In the mouth, it is pleasantly dry, full-bodied, savoury, with a robust and persistent structure. Precisely because of its structure, Timorasso can be paired with a wide range of dishes. It goes particularly well with fish dishes, appetisers, risottos and white meat dishes. Its acidity, on the other hand, also makes it an excellent companion for medium-aged cheeses.
