The Friulano grape variety, also known as Tocai Friulano, is an indigenous white grape of Friuli and is considered one of the most important and characteristic varieties of the region. After all, the hills of Friuli offer an ideal environment for growing this grape, thanks to the influences of the Adriatic Sea and the Alps. Here, moreover, the mineral-rich soils and the beneficial temperature fluctuations between day and night contribute to the perfect ripening of the grapes and the consequent development of aromatic substances. Castello di Spessa, in particular, offers this Rassauer Collio DOC, 100% Friulano, made from grapes from the Capriva del Friuli area. Vinification is simple but super accurate, with initial fermentation in temperature-controlled stainless steel tanks. During this phase, part of the must is kept in contact with the skins for a few days to extract more aromas. At the end of this process, the wine matures in stainless steel until at least March, remaining in contact with its fine lees. Straw yellow with green hues. The nose is complex and broad with fruity notes of apricot and peach, floral notes of broom and minerals. In the mouth, however, it reveals a great balance between softness, freshness and savouriness, with a long, creamy finish. Try it with simple hand-cut prosciutto crudo di San Daniele. But also with eggs and asparagus, herb omelettes and legume soups.
The region is Friuli Venezia Giulia. The winery is that of Castello di Spessa. We are, let us be clear, in one of Italy's most prestigious wine-growing areas and one of the area's most qualitative wineries. The origins of the winery date back to the late 1970s, when Loretto Pali bought an estate of around 60 hectares in the Isonzo area. Then, in 1987, the property was further expanded with the acquisition of the Castle and a further 28 hectares of vineyards, this time in the Gorizia Collio, in Capriva del Friuli. All of Castello di Spessa's wines are produced from its own vineyards, where typical local grape varieties dominate with: Ribolla Gialla, Friulano, Sauvignon Blanc, Chardonnay, Pinot Grigio, Pinot Bianco, Pinot Nero, Merlot and Cabernet Sauvignon. The wines are then aged in the medieval cellars and in the bunker, dug under the castle during World War II (and only discovered in 1987 during a renovation). Situated at a depth of about 18 metres, at a constant temperature of 14 degrees Celsius, the bunker is the ideal place for ageing the estate's fine wines.
