There are few grape varieties that are able to meet with transversal acclaim, both from experts and professionals in the sector and from simple enthusiasts. Among these is undoubtedly Pinot Grigio, the symbolic variety of our North East. Especially when, as in this case, it is a truly well-made product, produced by an important entity such as Castello di Spessa, from grapes harvested in estate vineyards that are now over 30 years old. We are in the municipality of Cormons and here the harvest begins at the end of August. The carefully selected grapes are soon taken to the winery for processing. After a soft pressing, the bunches are placed in a steel tank to begin the fermentation phase at a controlled temperature. At the end of this process, the wine matures, again in steel, in contact with the noble lees until at least March. Straw yellow with greenish highlights, on the nose this Pinot Grigio, DOC Friuli Isonzo, offers notes of ripe fruit and acacia flowers. In the mouth, however, it is dry and fresh, characterised by a beautiful persistence that prolongs the pleasure of each sip for several minutes. If you bring it to the table at a nice dinner with friends, make sure you have at least two bottles ready in the fridge. It won't last long, especially if the menu is all fish, with a tasty fritter or a first course of spaghetti allo scoglio. It is also good with white meats and vegetable soups.
The region is Friuli Venezia Giulia. The winery is that of Castello di Spessa. We are, let us be clear, in one of Italy's most prestigious wine-growing areas and one of the area's most qualitative wineries. The origins of the winery date back to the late 1970s, when Loretto Pali bought an estate of around 60 hectares in the Isonzo area. Then, in 1987, the property was further expanded with the acquisition of the Castle and a further 28 hectares of vineyards, this time in the Gorizia Collio, in Capriva del Friuli. All of Castello di Spessa's wines are produced from its own vineyards, where typical local grape varieties dominate with: Ribolla Gialla, Friulano, Sauvignon Blanc, Chardonnay, Pinot Grigio, Pinot Bianco, Pinot Nero, Merlot and Cabernet Sauvignon. The wines are then aged in the medieval cellars and in the bunker, dug under the castle during World War II (and only discovered in 1987 during a renovation). Situated at a depth of about 18 metres, at a constant temperature of 14 degrees Celsius, the bunker is the ideal place for ageing the estate's fine wines.
