Argentina, Salta region. Here, quality wine growing is mainly concentrated in the Cafayate valley. This valley, characterised by a continental climate with strong mountain influences, is located at high altitudes between 1,500 and 3,000 metres above sea level. Here, the temperature differences between day and night are considerable, with warm, sunny days and cool nights. This temperature range favours a slow and complete ripening of the grapes, while maintaining freshness and acidity. To combat drought, the vines in this area are irrigated with water from the Andes, through a complex system of canals that supplies the vines with pure, fresh water. The Salta area produces high quality wines with intense aromas of red and black fruit, spices and a good tannic structure. A fine example is this Malbec, fermented with selected yeasts in thermoregulated tanks and matured for about a year, half in French oak barrels with very soft toasting, and the other half in concrete tanks. Certainly good today, this Argentine Malbec reveals great ageing potential. On the table it goes well with savoury meat dishes, beef or pork. Also perfect with cured meats and medium-aged cheeses.

Thus Vallisto was born. It is 2010 and the three friends/colleagues set off by recovering five vineyards in the surroundings of Salta in the north of the country. In fact, in Vallisto's DNA, in addition to promoting Malbec, there is also the idea of saving from abandonment some of the oldest vineyards and authentic witnesses of Argentina's oenological past. Thus, in addition to Malbec, vineyards of other varieties, such as Pais and Torrontés, are also recovered.
