Bodega Andeluna's Cauco Malbec is a structured red wine from the Mendoza region, more precisely from the Valle de Uco in Argentina. It is made exclusively from Malbec grapes, a variety now considered indigenous to the region, and one of the country's most representative. The grapes are harvested by hand and undergo a pre-fermentation maceration at low temperatures in order to obtain a greater extraction of the fruity aromas. Fermentation takes place in temperature-controlled stainless steel tanks using selected yeasts. During this process, pumping over takes place three times a day, as well as one or two racking. Subsequently, part of the wine is racked into French oak barrels to acquire further aromatic nuances. Finally, the wine is aged in bottles for a minimum of 3 months before release. Cauco Malbec presents itself in the glass with a beautiful deep purple colour, with floral aromas of violets, fresh mint and spices, typical characteristics for Malbecs from the Uco Valley. The palate reveals a pleasantly tannic and rich wine, with a light touch of oak and vanilla. Rich and enveloping, this red is a clear expression of its terroir. Served slightly chilled, at a temperature of around 16°C, it is a wonderful accompaniment to red meats and mature cheeses.
