Il Priore, Verdicchio dei Castelli di Jesi DOC, Classico and Superiore, is Sparapani's most representative wine. A Marchigiano DOC, this pure Verdicchio comes from the estate's vineyards, cultivated with maniacal care by the family. Strictly hand-picked and selected, the grapes are soon brought to the cellar to be softly pressed and the must then cleaned. This is followed by fermentation in temperature-controlled steel tanks, followed by a period of ageing on its lees for a total of 6 months, plus a further 8 months in the bottle. We thus discover a wine characterised by an intense straw-yellow colour with green-gold reflections, a rich and complex bouquet reminiscent of yellow-fleshed fruit and floral hints of acacia. The finish is decidedly mineral. A wine of great structure, it has a soft impact on the palate, with a nice freshness and excellent persistence. Good even today, it is a white that does not fear the passage of time. In the cellar, if stored well, it is able to mature for a long time, even 8 years. A strongly territorial wine, on the table it not only goes well with the classic dishes of the Marche region, based on meat and fish, but is also excellent with shellfish, medium-roasted cheeses, white meats and cured meats.
The Sparapani company is located in Cupramontana, in the heart of the Marche region. It has a long history dating back to 1933, when the family bought the current structure with the food shop business. In 1980, Settimio Sparapani took over his grandparents' business, dedicating himself to the cultivation and processing of Verdicchio. With him were his wife and three children, Giuseppe Paolo and Francesca. Thus was born the Sparapani Frati Bianchi winery, with reference to an adjacent hermitage. The rest is history, with the production of the prized Verdicchio dei Castelli di Jesi Classico Superiore and Riserva, up to the vinification of pure Montepulciano grapes, aged in wood.
