    "Primaio" Dolcetto d'Alba DOC 2022
  • It is called Primaio and it is a Dolcetto d'Alba DOC, proposed here by San Silvestro. The 'true wine of everyday life in Piedmont', the one that has been drunk in the homes of winemakers for generations. Dolcetto is able to adapt to every dish and every type of meal thanks to its unique versatility. A sincere wine that in the past has struggled to find its rightful place in the spotlight, crushed by Barolo and Barbaresco, but that today is being rediscovered precisely because of its simplicity and its ability to be balanced and familiar. Primaio comes from a simple but careful processing of the best Dolcetto grapes. After processing, it is aged exclusively in stainless steel tanks. Bright ruby red, in the glass it soon reveals its fresh and immediate character. The nose shows forthright aromas of ripe berries. In the mouth, however, it is pleasantly harmonious and of medium structure. To put it at ease, always serve it with simple traditional dishes, such as veal in tuna sauce or boiled meats. It is also excellent with egg tagliolini or fresh cheeses.

    Cantina San Silvestro is located in Novello, in the heart of the Langa del Barolo. Here, Paolo and Guido Sartirano carry on - with wisdom and respect for tradition - the fine family business. For four generations, it has been a history of investing in the future. Today, thanks to the close collaboration with the vine growers, San Silvestro is able to offer a range of wines that touches all areas of Piedmontese viticultural excellence, from Gavi to Barbaresco via Asti and Barolo. The company can count on approximately 7 hectares of vineyards, some of which are dedicated to native vines such as Nas-cëtta, typical of the municipality of Novello. The range is completed with two Metodo Classico sparkling wines. The cellar, on the other hand, covers an area of about 5 thousand square metres, of which about 4 thousand are underground, minimising the impact on the surrounding environment.
