But it is only since 2014 that the regulations have regulated its marketing. In this case, the overripe bunches of Barbera undergo a special drying process. A sort of 'withering' that aims to concentrate the colour and above all the aromas. This is followed by an ageing phase before marketing. A rich and opulent wine, it is striking on the nose for the power of its aromas reminiscent of ripe fruit and marasca cherry jam. In the mouth, however, a slight residual sugar accompanies the velvety and silky sensations of fine tannins. A very special wine, this Barbera can accompany meat dishes or mature cheeses. Others, however, prefer to sip a glass at the end of a meal as a meditation wine.
A fine family of Piedmontese winemakers. We are talking about the Sartirano family, four generations united by a unique territory. Let's start with the origins. Sartirano has been in the wine business since 1871, although the most important oenological activity only began in 1910 thanks to Giovanni, who began producing and marketing his wines mainly in Piedmont. From father to son, we arrive at 1946, after the Great War, when his sons Pietro and Giovanni take over from their father, continuing his work and maintaining the focus on quality. Then, in 1973, the first automated bottling line was set up in the cellar and the company took the name Cantine San Silvestro. While 1988 saw the acquisition of Costa di Bussia - Tenuta Arnulfo, a historic winery with 11 hectares of vineyards in one of the most important Barolo production areas. But that was not enough. In 2002, in fact, the Sartirano family also purchased Tenuta Ghercina, in Novello, with 7 hectares of vineyards, again in an important Barolo production area. And it was here that Paolo and Guido, the new generation of the family in the winery, decided to build the new cellar, which boasts as much as 15,000 hectolitres of storage capacity, an area dedicated to ageing in wooden barrels and a room for ageing in bottles.
