If Barbera is the most widely cultivated vine in Piedmont, and Nebbiolo is what many consider to be the noblest, it is undoubtedly Dolcetto that Piedmontese farmers have always brought to their tables. A historic wine of the ancient Piedmontese winemaking tradition, in this version proposed by Prunotto it is aged in steel, to enhance the fragrance and vinosity of the fruit, typical of the variety. 100% Dolcetto harvested in the estate vineyards when perfectly ripe, on arrival in the cellar the grapes are destemmed and crushed. The maceration phase lasts about 7 days, at a controlled temperature, and after the alcoholic fermentation the malolactic fermentation is also promoted. This leads to the month of December, when the ageing phase begins in stainless steel tanks. Bright ruby red in colour, on the nose this Dolcetto reveals its vinous character, with notes of flowers and ripe fruit. In the mouth it is full and harmonious, with a pleasant almond aftertaste. A simple but not trivial wine, this Dolcetto is the perfect accompaniment to a rich Piedmontese bollito misto.
In 1904, the Cantina Sociale "Ai Vini delle Langhe" was founded in the council chamber of the municipality of Serralunga, in the presence of the notary Giacomo Oddero and the young head Alfredo Prunotto. In 1972, Ugo della Piana, an architect of Langhe origin, designed the new winery, which was to be built near Alba, where the company's headquarters are still located today. The last stage in the history of Prunotto dates back to 1989, the year in which the Antinori family began its collaboration with the company, initially dealing with distribution and then, in 1994, with the retirement of the Colla brothers, also with production. Today the estate extends over about 65 hectares, with vineyards in the best wine-producing areas of the region, from the Langhe to Monferrato.
