A grape variety, Fiano, capable of producing fantastic white wines. Often used in purity, as in this case, it represents somewhat the alter ego of Falanghina, with which it shares the burden of representing the world of Campania's white wines. In this case, Rossella Cicalese harvests the Fiano grapes used to make this white wine from her own vineyard in Perdifumo. After all, the name Fluminé is precisely a reworking of the name Perdifumo. It is no coincidence that in medieval times it was called 'pes-de-flumine', or 'at the foot of the river'. Here the soil is sometimes sandy and sometimes skeletal. In the countryside, sustainable viticulture is conducted, with green manure obtained from a mix of legumes and grasses such as clover, alfalfa, mustard and viccia. After vinification, 80% in steel, and the remainder in third-passage oak casks, the wine matures for several months in steel tanks, with weekly bâtonnage until bottling. A very bright intense yellow colour with green hues, the nose reveals fresh citrus and floral notes of hazelnuts and honey. In the mouth it is soft, with good texture and quite warm. In closing, it reveals itself to be a fresh wine, thanks to a pleasant acidity in good evidence. The finish is clean and long. Excellent with fish first courses, risotto alla pescatora and seafood salad.
