Harvested when fully ripe, the grapes are left to dry for a few days before being sent for processing. A slow process of water evaporation leads to a concentration of sugars in the grapes and the appearance of intriguing aromas. A broad bouquet and great structure are its main characteristics. Then a very long aromatic persistence and the typical tannic finish, well supported, in this case, by a pleasant sweetness. A wine with great capacity to evolve in the bottle, it can easily be left for years. To do it justice, however, one should not wait too long but find a tasty dessert to go with it.
