      Champagne "Solessence" Rosé Extra Brut
    • Today we begin a magnificent journey to the heart of the Côte des Blancs. Here we find Pierry, a small village full of history and charm, surrounded by hills covered in vineyards as far as the eye can see. This is an area where wine has been cultivated since Roman times, and even today the atmosphere is ancient. A curiosity. Pierry was the home of Madame de Pompadour, King Louis XV's favourite. Her passion for Champagne contributed to making this region famous throughout Europe. Champagne Rosé Extra Brut, produced by the J-M Sélèque winery, is a blend of Chardonnay (45%), Pinot Meunier (40%) and Pinot Noir (15%). The grapes, from different vineyards, are vinified separately. The Pinot Noir, from the Les Tartières parcel in Pierry, together with part of the Pinot Meunier vinified as a red, gives the wine its delicate pink hue. The final blend also includes 40% vin de réserve, i.e. wines from previous years, which give complexity and structure. After disgorgement, the Champagne is dosed with only 2 g/l of sugar, resulting in an Extra Brut with a marked freshness. A delicate pink colour, on the nose the Solessence Champagne presents aromas of fresh red fruits, such as strawberry and raspberry, accompanied by floral notes and slight hints of yeast. In the mouth it is fresh and lively, with a fine and persistent perlage. The finish is long and savoury, with a pleasant mineral note that recalls the clayey-silty terroir of Pierry. Perfect as an aperitif, it goes well with shellfish, delicate appetisers or fish-based dishes. Thanks to the low dosage, it is a wine that also goes well with spicy or slightly hot dishes.

      Vallée de la Marne. One of the renowned areas of Champagne. This is where J-M Sélèque operates. The headquarters are in Pierry, Coteaux Sud d'Epernay, south of the capital of the Champagne region. He is a small RM, or ‘Récoltant Manipulant’, a winegrower who produces and sells Champagne with his own label, using only grapes from his own vineyards, and processed in his own cellars. Specifically, Sélèque has 9 hectares of land, divided between Chardonnay (50%), Pinot Meunier (40%) and Pinot Noir (the remaining part). In total, the production is about 100,000 bottles, all very enjoyable. The history of the winery began in 1965, when Henri Sélèque planted the first vines. His son Richard joined the company a few years later, in 1974, after obtaining a diploma in oenology. The other crucial change came in 2008, when Jean-Marc, the founder's grandson, took over the company. He is credited with having been able to renew the style of the company, learning from the past to interpret contemporary tastes.
