Vincent Couche cultivates 10 hectares of Pinot Noir in Buxeuil and 3 hectares of Chardonnay in Montgueux, following biodynamic practices certified Demeter since 2008, to preserve the biodiversity and vitality of the soil. The predominance of Pinot Noir gives structure and aromatic intensity, with notes of red fruits such as strawberry, raspberry and cherry. The Chardonnay adds elegance and delicacy, enriching the aromatic profile with citrus and floral nuances. Vincent Couche adopts an innovative approach in the production of Rosé Désir Nature, using three distinct methods for the elaboration of the must and fermentation takes place only with indigenous yeasts. In addition, 50% of the base ages in wood, adding depth and structure, and no dosage is added at the time of disgorgement, maintaining the purity and authenticity of the wine. In the glass, Rosé Désir Nature has a vibrant pink colour and fine, persistent bubbles.
