The recipe is simple: 80% vintage wines, with a third Pinot Noir, a third Meunier and a third Chardonnay. The remainder is made up of reserve wines to add complexity. Half Pinot Noir and half Chardonnay. This is how Charles Heidsieck's Champagne Rosé Réserve was born, made only with grapes from the region's best crus. Champenoise method, with over 36 months of ageing on the lees, this Cuvée rests in the Maison's thousand-year-old chalk quarries. Here, protected from noise and stress, the Champagne rests at a constant temperature of 10°C. Charles Heidsieck's Rosé Réserve is a beautiful powdery pink colour in the glass, with still lively nuances. The nose is very intriguing, with a bouquet that is both fine and complex, with aromas of strawberry jam and peach. Then notes of gingerbread and cinnamon. In the mouth, however, it reveals an impetuous character, with notes of fresh fruit reminiscent of raspberry and blackberry. All made even more intriguing thanks to subtle hints of pastry and custard. This is the ideal Champagne to accompany simple aperitifs but it is also ideal when paired with savoury fish or white meat dishes. For a combination of pure pleasure, however, it should be served with a few slices of original Bolognese mortadella, thinly sliced.

The gesture, as well as the quality of the wine of course, won over the soldiers charged with carrying out his sentence and they decided to give it up. This is a legend, of course. What is certain, however, is that one of the region's best-known houses is dedicated to him. Charles Heidsieck's champagnes still embody the soul of the founder, a visionary and innovative gentleman whose ambition enabled him to create refined cuvées with a unique and inimitable style.
