Ruvo di Puglia is located on the foothills of the Murgia. This interesting Castel del Monte DOP Bianco is produced here. It is offered by CRIFO, the historic brand of the Ruvo di Puglia winery. The vineyards are located at an altitude of about 400 metres above sea level, benefiting from a temperate and ventilated microclimate that favours a slow and uniform ripening of the grapes. The soil here is marly, slightly clayey and enriched by sandy components of karstic origin. This contributes to the wine's distinctive freshness and minerality. The basic grape variety is Bombino bianco, a native Apulian variety that expresses itself best in these lands. Cultivated with the traditional pergola, Bombino bianco is particularly appreciated for its ability to maintain good acidity even in particularly hot climatic conditions. Immediately after the harvest, the grapes are brought to the cellar and subjected to a soft pressing, in order to extract the so-called ‘must flower’. This is then cooled and kept at a low temperature for a few hours, a technique that helps to preserve the delicate fruity and floral aromas. After a natural clarification, the must is fermented in temperature-controlled stainless steel tanks using selected yeasts. The wine continues its ageing in stainless steel until bottling, to keep its freshness and vivacity intact. Castel del Monte DOP Bianco has a brilliant, straw-yellow colour. On the nose, intense and fragrant aromas of white flowers, followed by notes of crisp fruit and a hint of aromatic herbs. In the mouth, the freshness and savouriness are perfectly balanced with the alcohol content, offering a harmonious and pleasantly persistent sip. The finish is long and enriched with citrus and balsamic notes, inviting one to taste again. Try it with light, tasty dishes such as raw fish carpaccios, peppered mussels, broad beans and chicory, stuffed cuttlefish and sea bass in salt. Its freshness also makes it an excellent companion for aperitifs and appetisers.

In this journey, 2010 represents a milestone. That year saw the inauguration of a new winemaking facility, designed to process native Apulian varieties. The winery's vineyards cover an area that encompasses the provinces of Bari and Barletta-Andria-Trani, in the heart of Apulia. The proximity of the sea offers an ideal microclimate for viticulture, thanks to the sea breezes that mitigate the high summer temperatures typical of the area. The vineyards are cultivated using various traditional techniques, including the alberello and the Apulian pergola. Among the vines grown are the main indigenous varieties, such as Nero di Troia, Primitivo and Bombino Bianco. The historical name of the cooperative, Cantina della Riforma Fondiaria, is the basis of the acronym CRIFO, by which the Cantina's wines have always been known. Today, the Cantina can count on the cooperation of more than 400 members who guarantee an annual production of more than 8,000 tonnes of grapes.
