Allow us to exaggerate. The one proposed here, in fact, is a true excellence of the Valdostan territory. An oenological pearl that brings the essence of the Alps into the glass. We are talking about Glacier, Metodo Classico proposed by Cave Mont Blanc de Morgex et La Salle. Produced entirely from Prié Blanc grapes, an indigenous vine that grows in extreme conditions, between 900 and 1200 metres above sea level, it is a wine of heroic vine-growing territory. The vineyards of Morgex and La Salle, in fact, are located at the foot of Mont Blanc, the highest peak in Europe, in a spectacular setting. Here, the temperature variations between day and night are marked and ensure a slow and gradual ripening of the Prié Blanc, whose resistance to cold mountain winters and ability to ripen at high altitudes make it a unique variety. Cultivated on a free-range basis, thanks to the geographic isolation of the Aosta Valley, Prié Blanc gives fresh, elegant and mineral wines. The first fermentation takes place both in large larch and oak barrels and in stainless steel, a mix that gives the base wine complexity and freshness. It then rests on the lees for at least 24 months, developing fine bubbles and great aromatic complexity. The dégorgement, the disgorgement, takes place without dosage of sugar. The Glacier is a Pas Dosé, pure, dry and capable of expressing the mountain character of Prié Blanc at its best. Extremely versatile on the table, it lends itself well as an aperitif but is also a perfect companion throughout the meal. Try it with grilled fish and shellfish.
