    • Sensations A straw-yellow, brilliant sparkling wine with a harmonious and intense bouquet, with light notes of fruit, fresh yeast and bread crust. Intense and persistent perlage, pleasantly dry, fresh and very balanced flavour, with a marked acidity.
    • Vinification The very gentle pressing of the grapes is carried out using a Marmonnier press in the historic cellars dating from the beginning of the 19th century – recognised as a World Heritage Site – where only the heart of the must is vinified. The must from each pressing and batch is fermented both in barriques and in steel tanks until the cuvée is prepared and the wine is racked for the second fermentation in the bottle on the lees for about 40 days. This is followed by ageing on the lees for at least 36 months at a controlled temperature.

    • The Alta Langa DOCG 36 mesi Pas Dosé by Fratelli Gancia is the result of a perfect combination of a unique territory, the Langhe, top quality vines, Pinot Noir and Chardonnay, and a production tradition that has its roots in 1850. But let's proceed in order. This Pas Dosé is made from 75% Pinot Noir and the remaining part from Chardonnay. These two Burgundy grape varieties find their ideal habitat in the hills of the Alta Langa. The grapes, harvested by hand, are subjected to a soft pressing using a Marmonnier press, a traditional method that preserves the integrity of the skins and the aromas. Then only the free-run must is used for vinification, partly in barriques and partly in steel. The wine is aged on the lees for no less than 36 months, giving it elegance and complexity. Brilliant straw yellow colour, with a fine and persistent perlage. The bouquet is reminiscent of fresh fruit, yeast and bread crust, with a touch of minerality typical of the territory. In the mouth it is fresh and dry, with a marked acidity that makes it particularly balanced and pleasant to drink. Good already today, this sparkling wine has an excellent ageing potential. With time it will develop more complex and refined notes. Perfect with seafood appetisers, raw fish, delicate risottos and aged cheeses, but also suitable as a wine for meditation, to be savoured on special occasions.
