      "Aristos Zero" Metodo Classico Dosaggio Zero
    • Aristos Zero Metodo Classico was born in the heart of South Tyrol, one of Italy's most fascinating wine-growing regions. In the mountains of the Isarco Valley. The grapes selected for this sparkling wine come from the vineyards surrounding the Sabiona monastery, a place steeped in history and spirituality. Here, the gravelly alluvial soils, rich in diorite, and the altitude, ranging from 550 to 700 metres, give the pure Sylvaner grapes a unique minerality and freshness. The climate here is cool and sunny and helps slow down the ripening of the fruit, resulting in wines with lively acidity and intense aromas. The South Tyrolean aromatic Sylvaner is a grape variety characterised by great versatility, perfect for the production of high-quality sparkling wines. In fact, this grape variety gives the wine fruity, floral and mineral notes, which combine perfectly with the freshness and complexity of the classic method. The grapes are harvested by hand and subjected to a gentle pressing. Fermentation takes place partly in stainless steel and partly in wood, to preserve the freshness and enrich the aromatic bouquet. The base wine is then re-fermented in the bottle according to the traditional method, with ageing on the lees for at least 36 months. Brilliant straw yellow in colour with golden hues, it releases an intense and complex bouquet on the nose, with hints of white flowers, white-fleshed fruit, bread crust and mineral notes. In the mouth, it is creamy and mineral, with lively acidity and a long, lingering finish. A sparkling wine of great complexity and longevity, it can be drunk young, to appreciate its freshness and liveliness, or it can rest quietly in the cellar for several years, developing evolved and complex notes. Excellent as an elegant aperitif, it goes well with raw fish dishes, shellfish and fresh cheeses.

      Despite the fact that Valle Isarco boasts a very old winemaking tradition, the beautiful cooperative winery was only founded in 1961, by 24 families. Cantina Valle Isarco is the youngest wine co-operative in South Tyrol and today, after more than 60 years of existence, can count on the work of no less than 135 members who cultivate a total of 150 hectares of vineyards, spread over 11 municipalities from Bolzano to the south of Bressanone. The Eisack Valley offers one of the most beautiful natural landscapes in South Tyrol, characterised by majestic mountains, ancient farms, castles, monasteries and villages, magnificent chestnut groves and, above all, terraced vineyards with their tidy stone walls. Here, the winegrowers do ‘heroic’ work, accustomed as they are to caring for predominantly steep terrain, with plants growing up to 950 metres high. Vineyards that are often tiny in size but just as often characterised by unique soil and climate conditions. The special microclimate of this area, characterised by warm summer days and cold nights during the harvest period, ensures the production of fresh, fruity and mineral-rich wines. Overall, the Cantina Valle Isarco's annual production is around 950,000 bottles, divided between no less than 14 varieties, of which 10 white and 4 red. The total number of labels is 28, including some very interesting special editions. The winery's ‘white’ vocation is best expressed by the good local grape varieties, such as Kerner, Sylvaner, Grüner Veltliner, Gewürztraminer and, of course, Müller Thurgau.
