A bubble definitely outside the box. This is a 'Strappo alla Regola': the Millesimato Pas Dosé proposed here by Cantina Le Macchie. A wine that challenges the conventions of bubbly oenology, combining the tradition of indigenous grape varieties with the elegance of the Metodo Classico. We are located in Castelfranco, in the province of Rieti, an area with a vocation for the production of quality grapes, where the clayey soils, rich in minerals, offer an ideal habitat for Malvasia and Sangiovese, the two grape varieties that are the protagonists of this Millesimato. Malvasia, a historic vine in the area, gives the wine floral and fruity aromas, elegance and finesse. The Sangiovese, on the other hand, brings structure, power and freshness, completing the picture with a distinctive note. White vinification and ageing on the lees for 24 months give the wine complexity and harmony. In the glass, Strappo alla Regola reveals a bouquet of intense and seductive aromas. Floral notes of jasmine and white flowers intertwine with hints of ripe fruit, yellow peach and golden apple. On the palate, the wine explodes in a swirl of tanginess and freshness, with a fine, persistent bubble that caresses the tongue. The decisive structure of the Sangiovese blends perfectly with the elegance of the Malvasia, giving a long and persistent sip that invites you to a second toast. The altitude is between 610 and 1075 metres above sea level, with good exposures towards the south occupied by the later varieties, and others towards the south-west where the more precocious varieties are found. A soil rich in minerals favours the growth and development of high quality grapes. It produces wines characterised by a beautiful freshness and flavour. Given the altitude of the vineyards, their slope and the difficulty of the work, the winery is a member of Cervim, the certification body for Eroica viticulture.
