Erbaluce di Caluso DOCG Primavite was born in the heart of Canavese, in Piedmont. Cantine Crosio offers it. It is a fresh and mineral white wine that well represents its origin. Son of a unique territory, the vineyards from which the grapes come, 100% Erbaluce, lie between 320 and 340 metres above sea level. They develop on moraine soils, rich in gravelly debris and sand, and give the grapes that unmistakable mineral character that sets them apart. Erbaluce, an ancient and rare native grape variety, for its part, is capable of producing wines of great finesse and elegance. This is also due to the use of the traditional ‘pergola canavesana’, typical of the area, which favours optimal exposure to the sun and good air circulation, guaranteeing healthy and perfectly ripe grapes. Manual harvesting in boxes to ensure careful selection of the bunches, once in the cellar they are immediately subjected to cryomaceration. This is followed by soft pressing and decanting of the must, which is then sent for fermentation. At the end, ageing takes place, again in steel, in contact with the yeasts, for about 5-6 months, preserving the wine's freshness and vivacity. This is followed by bottle ageing for at least 3 months before release. The result is a wine with a luminous straw-yellow colour with greenish highlights. The nose offers an intense and complex bouquet, characterised by notes of aromatic herbs, sage, yellow flowers and citrus fruits. With ageing, then, mineral scents and hints of hydrocarbons emerge, making it even more elegant. In the mouth, finally, Primavite amazes with its crisp freshness and savouriness. A vibrant acidity perfectly balances the softness, giving a balanced and persistent sip, with a slightly almondy finish that adds a touch of elegance. Perfect as an aperitif, on the table it goes well with fresh cheeses such as buffalo mozzarella and burrate. Excellent with cured meats, savoury pies, omelettes and focaccia.

In the vineyard, the principles of integrated pest management are followed, using products of natural origin such as algae, essential oils, copper and sulphur.
