Super-awarded and appreciated by experts and enthusiasts all over the world, this elegant Sicilian passito is made from almost pure Malvasia delle Lipari grapes, to which is added a small percentage, about 5%, of Corinto Nero. All the grapes grow on the dark volcanic soils of the Aeolian Islands, specifically at Capo Faro on Salina. The grapes are harvested at the end of September. After the late harvest, and after drying on racks, the grapes are gently pressed. This is followed by refinement in temperature-controlled stainless steel tanks for 1 year. Golden colour tending towards amber, the nose presents a bouquet of fresh fruit ranging from apricot to fig. Then sweet honey and a hint of almonds, followed by floral hints of jasmine. It is a wine with which to end a lunch or dinner on a high note. Perfect in combination with dry desserts and spoon desserts, it can also be served with classic blue cheeses.
For over 40 years, the Colosi family has been cultivating vineyards on charming terraces overlooking the sea of Salina, the small island of the Aeolian archipelago, a land highly suited to the cultivation of vines. 10 hectares between Capo Faro and Porri, one of the areas considered among the best, both for exposure and for the nature of the soil. Vineyards on old terraces, obtained by restoring old dry-stone walls, where the typical varieties of the island are grown, from Corinto Nero, Nerello Cappuccio, Nerello Mascalese, Inzolia, Catarratto and Malvasia. Malvasia, in particular, is the main grape variety in the entire wine production of the territory and of the Colosi company. Colosi's production is centred on indigenous grapes from the archipelago but also from Sicily, thanks to twenty-year collaboration contracts with selected Sicilian producers.
