    • Sensations Colour: pale purplish red tending to cyclamen with a powder pink foam. Aroma: intense floral notes of violet combined with fruity hints of raspberry and strawberry. Taste: full and enveloping, with a pleasant acidic note, balanced in its dryness and never yielding, it presents characteristic notes of raspberry, strawberry and cherry typical of the grape variety.
    • Vinification The grapes, harvested by hand, are softly pressed and cooled in small tanks at a low temperature for 2-3 days. The decanted must is placed in an autoclave at a temperature of 15-18°C for a slow second fermentation, until all the sugars have been used up. Then the wine is left to age on its lees for at least 120 days (Charmat-Lungo sparkling wine method), after which it is bottled.

    • The Lambrusco di Sorbara Frizzante Secco DOC Vigna del Cristo di Cavicchioli is a wine from Emilia with character. In this case, a vineyard has inspired a whole range of wines. Vigna del Cristo, the oldest jewel of the Cavicchioli Estate, is located a few steps from the Secchia river. And it is precisely from here, from this corner of paradise in the hills of Modena, that this Lambrusco di Sorbara DOC is produced. We are in San Prospero, a valuable natural amphitheatre, characterised by a mild climate and alluvial soils rich in minerals. Here the river Secchia flows placidly not far from the vineyards and plays a fundamental role in the local microclimate, mitigating summer temperatures and guaranteeing optimal drainage of the soil. Produced exclusively with Sorbara grapes, hand-picked at the right degree of ripeness, the wine-making process is carried out in the traditional way, with spontaneous fermentation and brief maceration on the skins. The refermentation in an autoclave gives the wine its characteristic fine and persistent foam. It has a beautiful ruby red colour, embellished with a light and persistent pink foam. The nose has an elegant and complex bouquet, where fruity notes of cherry, blackcurrant and wild strawberry intertwine with delicate floral nuances of peony and pomegranate. The whole is enriched by a pleasant minerality, which gives the wine great freshness and depth. In the mouth it is enveloping and persistent, with a pleasant acidity that balances the sweetness of the fruit. The bubbles are fine and creamy and enhance the freshness of the wine. Ideal as an aperitif, it goes very well with traditional Emilian first courses, such as tortellini in broth and tagliatelle with meat sauce.
