Criolla is a red berry grape typical of Argentina. Here, with its 15,000 hectares it is even the third most widespread, after Malbec and another not-so-well-known grape variety in Europe called Cereza. The lack of awareness of this grape variety is due to the fact that it is generally not used for highly prized wines but only for products for local consumption. Bodega Vallisto, however, in its work to enhance Argentina's winemaking heritage, could not fail to produce an interesting pure Criolla. It starts with manual harvesting in 20 kg crates, and careful selection of the grapes. Vinification, however, takes place in cement tanks, in contact with the skins for only a few hours to limit the extraction of color and tannins. The result is a wine characterized by a beautiful soft red color. The nose stands out for the freshness and directness of its aromas, with very clear notes of cherries and pomegranate. In the mouth, however, it impresses with beautiful freshness and moderate acidity. A truly inviting wine. A true oenological gem that must be tasted by every aspiring expert at least once in a lifetime.
This is the story of a dream come true. And, specifically, it is the dream of three winemakers, Francisco Lavaque, Marcelo Pelleriti and Hugh Ryman, who decide to produce great wines from the most representative grape variety of their land, Malbec, the symbol of Argentina. Vallisto was thus born. It is 2010, and the three friends/colleagues set out recovering five vineyards around the town of Salta in the north of the country. In Vallisto's DNA, in fact, in addition to the valorization of Malbec, there is also the idea of saving from abandonment some of the oldest vineyards and authentic witnesses of Argentina's winemaking past. Thus, in addition to Malbec, vineyards of other varieties, such as Pais and Torrontés, are also recovered.
