The altitude of the vineyards, together with the considerable temperature range between day and night, contribute to producing high quality grapes. The cooler temperatures favour the concentration of anthocyanins, polyphenolic elements present in the grape skins, which give the wine its intense colour. In addition, the naturally humidity-free environment helps prevent the spread of fungi and fungal diseases, reducing the need for chemical treatments. After the harvest, the grapes are carefully selected and brought to the winery. After destemming, they undergo low-temperature maceration to extract colour and aromatic substances. The subsequent alcoholic fermentation takes place in thermoregulated tanks and, after malolactic fermentation, the wine matures for about a year in medium toasted French barrels. The result is an exceptional and refined red, characterised by a lively and concentrated colour, with clearly recognisable aromas of flowers and fresh fruit.
